For centuries hams were salted and air dried into a salty, very tender specialty, called Prosciutto. Because of the mountain climate (dry, low humidity) it was possible to store them without refrigeration. Germans made the same style of hams with one difference: because of a higher humidity the ham is smoked to preserve it. In Germany cured hams are named Schinken. That is why we are using the original names for air dried hams - 'Prosciutto' and smoked hams - 'Schinken'.
